How barbeque began in Texas is a history that needs to be written.  I found no such history.  I "surmised" that Texans adapted southern recipes for barbequed pork into mouth-watering recipes for Texas-grown beef.  I have childhood memories of barbeque pits attached to mom-and-pop country stores.  At those stores you could also get news about the neighbors and credit until pay day.
